Research and application of a new functional glucan——alternan

  • 摘要: 交替糖是通过微生物发酵或酶催化产生的一种新型葡聚糖,具有益生元、低粘度填充剂、低酸稳定剂等功能。作为一种功能性碳水化合物,交替糖在食品工业中具有潜在的应用价值。本文对交替糖的结构、功能性质、生物制备以及工业应用领域的最新进展进行了综述,并展望了交替糖今后的发展趋势。 

     

    Abstract: Alternan, which produced by microorganism fermentation or enzymic catalysis, is a novel glucan with unique functions such as prebiotics, low-viscosity bulking agent and low-acid stabilizer. Alternan has greatly potential application in food industry as functional carbohydrate. The latest study was reviewed in this paper by introducing its chemical structure, functional properties, biosynthesis and progressed the application in food industrial field.
