小麦发芽富硒工艺及其抗氧化活性的研究

Study on enrichment of selenium in wheat seeds and the antioxidant activity

  • 摘要: 采用不同浓度硒溶液处理研究小麦芽对硒的耐受能力、小麦发芽过程中对硒的最佳富集条件和最佳富硒条件下富硒小麦的主要营养成分和其抗氧化活性。结果表明,小麦发芽对硒最大耐受能力为80μg/mL;小麦发芽富硒的最佳发芽条件为:硒溶液浓度40μg/mL,浸泡6h,发芽10h时喷淋硒溶液,发芽温度20℃,发芽时间2d;富硒发芽小麦的硒含量、有机硒和蛋白质含量显著提高,淀粉含量没有受到显著性影响;抗氧化性分析结果表明,硒能够有效地提高小麦的抗氧化能力。 

     

    Abstract: The different concentration of se soulution was used for wheats to optimum enrich selenuim, the value of wheats tolerance to selenium was be determination, the main nutritional components and antioxidant activity of Se-enriched wheat were be determinated.The results were as follows:selenium-rich wheat could tolerant a maximum selenium concentration of 80μg/mL.The optimum germination condition was soak for 6h with a selenium dose of 40μg/mL, sprayed at 10h of germination, its germination temperature was 20℃ and germination time was 2d.Subsequent work suggested that germination of selenium-enriched effectively improve the selenium content of wheat especially organic selenium content, and the protein concent of wheat.Starch content was not significantly affected.The result of antioxidant analysis showed that selenium could effectively improve the antioxidant ability of wheat.
