  • 摘要: 综述了壳聚糖涂膜在果蔬表面的界面特性,及通过物理或化学复合改性方法改善了壳聚糖涂膜的润湿性、透气性、机械强度和抑菌性相关方面的报道,为壳聚糖涂膜保鲜剂的研究提供参考和借鉴。 

     

    Abstract: The chitosan coating's characteristics in the food was summarized, and the properties such as wettability, permeability, mechanical strength and antimicrobial properties were changed through composite modification method of physical and chemical, which could provide theoretical basis for future study.
