水产动物组织中类胡萝卜素的研究进展

Research progress in carotenoids in aquatic animal

  • 摘要: 类胡萝卜素是一类含量丰富的天然色素,在食品、医药等行业中具有很高的应用价值。它广泛存在于水产动物中,在水产品感官品质评定方面起到了举足轻重的作用。本文详细综述了国内外水产动物体内类胡萝卜素的构成含量、功能以及提取分析方面的研究进展,为今后的研究提供参考。 

     

    Abstract: Carotenoids are a class of natural pigments which have high application values in food, medicine and other industries. Carotenoids are widespread in aquatic animals and play a pivotal role in sensory evaluation of aquatic product. Progress on composition and content, function, extration and analysis methods of carotenoids in aquatic animals was mainly reviewed in this paper in order to provide reference for future research.
