山药片及其伪品木薯片的多方法鉴别技术研究

Study on multiple methods to identify yam chips and cassava chips

  • 摘要: 山药片被木薯片伪冒的现象较为多见且后果严重,为了更准确的鉴别山药片和伪品木薯片,建立多角度综合鉴别的技术方法。本研究将传统方法和现代鉴别技术相结合,通过外观性状、显微特征、氢氰酸及尿囊素等多个鉴别方法来辨明真伪。结果表明山药片和伪品木薯片在外观性状、显微特征和理化指标等多个方面均显示出较大差异,如氢氰酸鉴别山药片呈阴性、伪品呈阳性,而尿囊素鉴别山药片呈阳性、伪品呈阴性等,可以通过这些方法进行有效综合判定。本研究克服了单一检测手段的局限性,可以更准确得出鉴别结论,为监管部门的质量把控提供了依据,对确保山药片作为食品和药品的安全性和有效性具有重要意义。 

     

    Abstract: Yam chips pretened by cassava chips is common and serious. In order to identify the yam chips and cassava chips in a more accurate way, multi- angle comprehensive identification techniques were established. In this study, multiple methods combined traditional methods and modern technologies to disprove were developed, including appearance identification, microscopic characteristics identification, hydrocyanic acid identification and allantoin identification.There was a big difference in terms of appearance, microscopic characteristics and physical and chemical indexes between yam chips and cassava chips, for example, negative yam chips and positive cassava chips were tested in hydrocyanic acid identification, while positive yam chips and negative cassava chips were tested in allantoin identification. Accurate conclusions can be drawn through the comprehensive judgment which overcomes the limitations of single detection means.This study provided a basis for regulatory controls and makes a great significance to ensure the safety and effectiveness of yam chips as both food and drug.
