银叶树种子蛋白的提取及其功能性研究

Study on the extraction and function of Heritiera littoralis seed protein

  • 摘要: 以银叶树种子为原料,考察提取工艺对其蛋白提取率的影响。通过单因素实验对影响银叶树种子蛋白提取率的p H、提取时间、液料比和提取温度等四个因素进行研究,并采用Box-Behnken实验设计和响应曲面分析法确定银叶树种子蛋白提取的最佳工艺条件。结果表明:最佳提取工艺条件为提取温度55℃、p H10、提取时间2h、液料比11∶1,在此条件下蛋白提取率为50.85%;银叶树种子蛋白的吸水性、起泡性和泡沫稳定性优于大豆分离蛋白;而大豆分离蛋白的吸油性、乳化能力和泡沫稳定性优于银叶树种子蛋白。 

     

    Abstract: The effect of process on extraction rate of Heritiera littoralis seed protein was discussed in this study.The factors of p H,temperature,time,and liquid / solid ratio were studied by single factor experiments,and Box-Behnken design and response surface methodology were applied to confirm the optimum experiment condition.The highest protein extraction rate was 50.85% under the condition: temperature( 55℃),p H10,extraction time 2h,liquid / solid ratio 11∶1. The water retention capability,foaming properties and foaming stability of Heritiera littoralis seed protein were better than SPI; the oil- absorbing,emulsifying capacity,and emulsifying stability of SPI were better than Heritiera littoralis seed protein's.
