山东引种无花果氨基酸及矿物元素成分分析与评价

Amino acid and minerals element composition analysis and evaluation of figs in Shandong

  • 摘要: 本文分析了9种无花果氨基酸与矿物元素的组成和含量,比较了不同无花果品种氨基酸和矿物元素成分的差异。采用氨基酸自动分析仪测定了9种无花果的16种氨基酸含量,采用原子吸收分光光度计测定了K、Se、Mg、Pb和Cd元素含量并进行了分析比较。测定表明,无花果氨基酸总含量范围在3724~8091 mg/kg之间,氨基酸种类较为齐全,含量最高的是天冬氨酸和谷氨酸。无花果中氨基酸比值系数分(SRC)均在95以上,绿早(B110)、波姬红和金傲芬高达98以上;紫果(中国紫果)、布兰瑞克、紫蕾(日本紫果)的氨基酸比值(RAA)接近1,氨基酸比值系数(RC)值高于1。另外,无花果K、Se、Mg元素含量丰富,9种无花果的K、Mg、Se元素的含量存在极显著差异(p<0.01)。无花果K、Se含量明显高于其他水果,为富钾、硒水果。研究结果显示,紫蕾、紫果和金傲芬品种体现出在氨基酸营养价值和矿质元素营养方面的综合优势,同时无花果各品种氨基酸组成与比例优异,富含有益矿质元素,具有较高的营养价值和开发利用前景。 

     

    Abstract: The content of amino acids and mineral elements of figs were analyzed and compared in this study.16 kinds of amino acids in 9 fig varieties were measured,and K,Se,Mg,Pb and Cd element were also measured by atomic absorption spectrophotometer.The results showed that the total amino acid content range were in 3724 ~8091 mg / kg,aspartic acid and glutamic acid were the highest levels among them.Essential amino acid SRC values of figs were more than 95,and B110( Conadria),Bojihong and Orphan were up to 98,the RAA value of China purple fruit,Browns Wick and Violette Solise were closed to 1,and RC valueshi higher than 1. In addition,the contents of K,Se and Mg elements in figs were rich,and there were very significant differences in the content of K,Mg,Se elements among 9 kinds of figs( p < 0.01). While the contents of K and Se in figs were higher than other fruits.The study showed that Violette Solise,China purple fruit and Orphan had the comprehensive advantages in nutritional value of amino acid and mineral elements. The composition and proportion of amino acid in figs were excellent,and the figs had higher nutritional value with good prospects for development and utilization.
