微生物交替糖蔗糖酶的研究进展

Research Progress of Microbial Alternansucrases

  • 摘要: 交替糖蔗糖酶(alternansucrase,EC 2.4.1.140)是一种具有转苷活性的葡聚糖蔗糖酶,可以催化蔗糖的葡糖基聚合反应以及受体分子存在时的受体反应等。利用其受体反应可以生产具有益生特性的低聚糖、对淀粉进行改性、提高黄酮类物质的溶解度、降低甜菊苷的苦味等。因此,交替糖蔗糖酶在食品、饲料、化妆品以及医药等行业具有潜在的应用价值。本文主要对产交替糖蔗糖酶菌株的选育、交替糖蔗糖酶的理化性质、三维结构、受体反应以及应用等方面的研究现状进行了综述,以期对微生物交替蔗糖酶的研究及其相关制品的开发利用提供参考。

     

    Abstract: Alternansucrase(EC 2.4.1.140)is a kind of glucansucrases with transglycosidase activity,and it catalyzes the polymer synthesis from sucrose or acceptor reactions in the presence of acceptors. Its acceptor reaction can be used to produce oligosaccharides with prebiotic activities,modify starch,enhance the solubility of flavonoids or reduce the bitterness of steviosides,which makes this enzyme have potential applications in food,feed,cosmetics and pharmaceutical industries. In this review,the research status of microbial alternansucrases was summarized,including strain breeding,biochemical properties,three-dimensional structure,acceptor reaction and potential applications. Besides,future perspectives of alternansucrase were also highlighted,with a hope to guide the further study of microbial alternanscurases and the development and utilization of related products.
