电子鼻在动物性烹饪原料品质检测中的应用

Application of Electronic Nose in Quality Detection of Animal Cooking Raw Materials

  • 摘要: 电子鼻是一种模拟人的嗅觉来分析、识别和检测复杂嗅味和挥发性成分的仪器,在食品行业有较好的发展。本文介绍了电子鼻工作原理及基本组成,综述了电子鼻在动物性烹饪原料品质及安全检测方面的研究进展,并对其应用趋势进行了展望。

     

    Abstract: The electronic nose is a apparatus,which simulate human olfaction to analyze,recognize and examine complex gas and volatility,and develops better in food industries. This paper introduced the working principle and basic composition of electronic nose,summarized the research progress of electronic nose in the quality and safety detection of animal cooking ingredients,and prospected its application trend.
