南疆地区甜樱桃品种果实品质测定与评价

Determination and Evaluation of Fruit Quality of Sweet Cherry Cultivars in Southern Xinjiang

  • 摘要: 以南疆地区引进的11个甜樱桃品种为试材,测定其13种果实品质指标(L*a*b*、单果重、果形指数、果实硬度、可溶性固形物、总糖、总酸、糖酸比、蛋白质、VC和水分),从物理指标、化学指标、感官指标和主成分分析角度进行综合评价。结果表明,紫黑色系甜樱桃中,早大果与美早单果重分别为7.35和6.88 g,明显高于其他品种,美早较早大果硬度高0.14 kg/cm2。拉宾斯单果重6.51 g、硬度0.79 kg/cm2,艳阳单果重11.70 g、硬度1.06 kg/cm2,分别为深红色系和红色系里的中大果形、硬度较大的品种。在可溶性固形物含量和糖酸比方面,美早、早大果高,艳阳、拉宾斯适中。早大果、美早果肉质地较细致,果皮较薄,口感偏软滑。艳阳、拉宾斯果肉质地较紧实,果皮韧而厚,口感偏重硬脆。综合分析,紫黑色系早大果和美早、深红色系拉宾斯、红色系艳阳综合品质最好,可在南疆地区适度推广种植。

     

    Abstract: 11 sweet cherry cultivars introduced in Southern Xinjiang were evaluated with 13 fruit quality factors(L*,a*,b*,single fruit weight,fruit shape index,fruit hardness,total soluble solid,total sugar,total acid,sugar acid ratio,protein content,VC content,moisture),and comprehensively evaluated by their physical index,chemical index,sensory index and principal component analysis. The results showed that,in purple black sweet cherries,the single fruit weight of Early big and Tieton were 7.35 g and 6.88 g,significantly higher than other cultivars. The fruit hardness of Early big was higher than Tieton. The single fruit weight and fruit hardness of Lapins were 6.51 g and 0.79 kg/cm2. The single fruit weight and fruit hardness of Sunburst were 11.70 g and 1.06 kg/cm2 and 1.06 kg/cm2.In the field of total soluble solid and sugar acid ratio,the Lapins and Sunburst were higher than the Early big and Tieton. The Early big and Tieton had fine pulp texture,thin skin and soft taste. The Sunburst and Lapins had tight pulp texture,thick skin and crisp taste. Analysis by synthesis,the comprehensive quality of the Early big and Tieton in purple black,the Lapins in scarlet,and the Sunburst in red were the best. They could be moderately planting in Southern Xinjiang.
