太赫兹光谱技术在食品添加安全领域的研究进展

Research Progress of THz Spectroscopy in Field of Food Additivity Safety

  • 摘要: 太赫兹光谱技术是一种新型的无损检测技术,若干食品添加剂在太赫兹波段都具有独特的吸收特征,探究食品添加剂及非法添加剂的太赫兹光谱,有利于更全面的认识食品添加剂的成分及相关特性,同时也利于鉴别非法添加剂的成分。本文首先系统的介绍了太赫兹光谱技术的研究方法,并依据大量国内外研究成果,从鉴定、定量分析、理论计算方法等方面,分析了太赫兹光谱技术在食品添加安全领域的研究进展。探讨了食品添加剂和非法添加剂的太赫兹光谱检测存在的问题,对今后的研究工作具有一定的指导价值。

     

    Abstract: THz spectroscopy is a new type of non-destructive detection technology,several kinds of food additives have their characteristic absorption peaks in THz frequency range,therefore,the study of terahertz spectrum of food additives and illegal additives is conducive to a more comprehensive understanding of the constituent elements and related properties of food additives and illegal additives. The research method of terahertz spectroscopy technology,and the analysis of terahertz spectroscopy technology in the field of food additivity safety from identification,quantitative analysis and theoretical calculation methods on the basis of a large number of previous research results are introduced systematically in this paper. The existing problems are discussed,which would provide certain value of guidance for future research.
