ε-聚赖氨酸作为天然防腐剂在食品中的应用研究进展

Research Progress in the Application of ε-Polylysine as a Natural Preservative in Food

  • 摘要: ε- 聚赖氨酸是由25~35个赖氨酸残基通过分子间羧基与氨基缩合形成酰胺键连接而成的L-赖氨酸同型聚合物,作为一种高效、安全、环保的天然生物防腐剂受到了欢迎。ε-聚赖氨酸可以通过影响细胞膜、遗传物质、酶及蛋白质完成抑菌作用,在食品中添加ε-聚赖氨酸不仅可以抑制腐败微生物的生长繁殖,还能延缓食品品质变化,提高食品质量,延长食品货架期。本文总结了近几年来国内外关于ε-聚赖氨酸抑菌机理的研究,重点阐述了ε-聚赖氨酸在各类食品中单独及复配使用时的防腐作用,为ε-聚赖氨酸在食品工业中的进一步研究应用提供参考。

     

    Abstract: ε-Polylysine is an L-lysine homopolymer connected by 25~35 lysine residues through the intermolecular carboxyl group and amino group condensation to form an amide bond. It is welcomed as an efficient, safe and environmentally friendly natural biological preservative. ε-Polylysine can complete the antibacterial effect by affecting cell membranes, genetic material, enzymes and proteins. Adding ε-polylysine to food can not only inhibit the growth and reproduction of spoilage microorganisms, but also delay changes in food quality, improve food quality, extend the shelf life of food. This article summarizes the research on the antibacterial mechanism of ε-polylysine at home and abroad in recent years, focuses on the antiseptic effect of ε-polylysine in various foods when uses alone or in combination, and would provide a reference for the further research and application of ε-polylysine in the food industry.
