Recent Advances in Pickering Emulsions Catalysis System and Its Applications in Food

  • Based on the related researches on Pickering emulsions catalysis system, this paper reviews the enzyme immobilization methods and solid particles, responsive design, and continuous flow reactor design in Pickering emulsion catalytic system. Moreover, the potential application of Pickering emulsions catalysis system in the food field is demonstrated by reviewing the application of Pickering emulsions catalysis system in the hydrolysis of oils, purification of oligoisomaltose and synthesis of actives.
