Effects of Water Retention Agents in concert with Different Packaging Methods on the Quality of Pollock Fillets during Storage

Abstract
This study systematically investigated the changes in the water content, water activity, pH, shear stress, TBARS, total number of colonies, sensory evaluation of pollock fillets at different storage temperatures under the synergistic conventional and nitrogen-filled packaging methods of compounded versus single water retention agent. The results showed that under the accelerated storage condition at 37 ℃, the water activity of the compounded water retention agent combined with nitrogen-filled packaging was 0.644 at 25 days of storage, which was better than that of the single water retention agent combined with ordinary package of 0.702. Under the storage condition at 25 ℃ for 60 days, the shear force of compounded water retention agent combined with nitrogen-filled packaging increased by 1.50 times and the TBARS increased by 0.78 times, which was better than that of the single water retention agent combined with ordinary packaging, which increased by 2.05 times in shear force and 1.11 times in TBARS. The compound water retention agent showed good thermal stability in high-temperature accelerated storage, and the single sorbitol water retention agent showed better moisture balance ability in ambient storage, but the water activity of the compound water retention agent combined with nitrogen-filled packaging remained the lowest in the storage process, and it could effectively delay the pH rebound, and it also showed the highest organoleptic score of 78.4, so that the compound water retention agent combined with nitrogen-filled packaging could slow down the quality deterioration of pollock fillets, and provide a reference for the industrialized production of pollock fillets.
