  • 摘要: 辣椒具有很高的营养价值与保健功能,产品开发潜力巨大。本文介绍了辣椒的营养成分、保健功能及辣椒的加工现状,最后对辣椒食品的综合研究和利用进行了展望。 

     

    Abstract: Chilli has a very high nutritional value and health-care function.Its developmental potential is huge.The nutrition, health function and current processing situation of chilli had been introduced.The integrative investigation and using of chilli food had been prospected.
