Research advances in hydrolysis of starch by Neopullulannase and its application

  • 摘要: 新普鲁兰酶(neopullulanase,nPU,EC3.2.1.135)是一种多功能复合型的淀粉水解酶。本文介绍了新普鲁兰酶的结构与性质以及在淀粉水解和转糖苷反应中的作用机理,阐述了新普鲁兰酶在α-淀粉水解酶族13中的分类地位及其在食品工业中的应用,并对其重要的研究价值和应用前景进行了展望。 

     

    Abstract: Neopullulanase ( nPU, EC 3.2.1.135) is one of the multifunctional complex type of amylase.Firstly, this review discussed the structure and properties of neopullulanase as well as the mechanism in starch hydrolysis and transglycosylation.Secondly, the taxonomic status of neopullulanase in α-amylase family 13 and its adhibition in food industry are elaborated.Finally, its important value of research and the prospect of application were forecasted.
