芡实精深加工研究进展

Research progress in deep processing of Euryale ferox

  • 摘要: 芡实是我国重要的水生植物之一,既有丰富的营养价值,又有药用价值。芡实的种仁富含多种营养素,可作为食品加工的原辅料。此外,芡实的种皮、壳、叶柄和花梗富含多种活性成分,可作为活性成分制备的原材料。本文对近年来关于芡实脱壳技术、保鲜技术、干燥技术、大分子物质研究、副产物综合利用以及芡实食品的开发与研究进行了综述,为充分利用芡实资源提供理论依据。 

     

    Abstract: Euryale ferox is one of the important aquatic plants in China and is of edible and medical values.Due to abundant nourishment composition in the seed of Euryale ferox,it could be used as raw materials for food processing.Furthermore,the coat,shell,petiole and peduncle of Euryale feroxare could also be used as raw materials for preparation of bioactive compounds.The study on processing of Euryale feroxare in recent years,such as dehulling,preservation,drying,macromolecules reseraches,byproducts utilization and Euryale feroxare food researches,was summarized in this review to provide a theoretical basis for the full use of Euryale ferox resources.
