海藻酸钠涂膜对百香果贮藏品质的影响

  • 摘要: 为研究海藻酸钠涂膜对百香果贮藏品质的影响,以百香果为研究材料,使用1%、2%和3%海藻酸钠涂膜处理百香果,以蒸馏水浸泡为对照,通过测定TSS、VC、总酸、总糖等指标来判断果实的贮藏品质。结果表明,贮藏过程中,2%海藻酸钠涂膜的百香果具有较低的果实失重率和皱缩指数,能较好地维持百香果的TSS、VC、总酸和总糖含量,从而维持百香果的贮藏品质。 

     

    Abstract: To study the effect of sodium alginate film on the storage quality of passion fruit,Passion fruit was coated by sodium alginate solution with the different concentration of 1%,2% and 3%,contrasting with Passion fruits soaked in distilled water. The shrinkage index,weight- loss ratio,TSS,vitamin C,titrable acidity and total sugars were determined.The results showed that the sodium alginate solution with the concentration of 2% treatment could decrease the shrinkage index and weight- loss ratio of passion fruit,it also could delay the loss of TSS,vitamin C,titrable acidity and total sugars content obviously in passion fruit.
