神秘果种子营养成分分析与评价

Analysis and evaluation of nutrient content of Synsepalum dulcificum seed

  • 摘要: 以神秘果种子为原料,依据国标及常规方法对神秘果种子的水分、灰分、粗纤维、粗脂肪、粗蛋白、还原糖、多酚、多糖、脂肪酸、18种氨基酸及12种矿物质元素等营养成分进行分析和评价。结果表明,神秘果种子中水分、灰分、粗纤维、粗脂肪、粗蛋白、还原糖、多酚、多糖含量分别为6.74 g/100 g、7.14 mg/g、4.40、15.69、26.76 g/100 g、0.59 mg/g、11.56 mg/g和12.33 mg/g;检测出20种脂肪酸,其中不饱和脂肪酸占脂肪酸总量的54.80%,主要是十八碳烯酸(29.96%);检测出18种氨基酸,富含多种药用氨基酸(63.75%),8种必需氨基酸含量占总氨基酸总量的40.69%,必需氨基酸比值系数分(SRC)达到了94.22;测定了12种矿物质元素含量,常量元素和微量元素中含量最高的分别为K和Mn,Cd、Hg、As、Pb四种重金属元素含量很低,均符合《中国药典》(2010版)标准。因此,神秘果种子是营养和保健价值较高的新资源食品,具有良好的开发前景。 

     

    Abstract: To investigate the nutritional components and evaluate nutritional value of the Synsepalum dulcificum seed,contents of water,starch,crude fiber,crude fat,crude protein,reducing sugar,polyphenol,polysaccharides,amino acids,18 kinds of aminophenol and 12 kinds of mineral were analyzed,with international standard methods and common methods.Contents of water,starch,crude fiber,crude fat,crude protein,reducing sugar,polyphenol and polysaccharides were: 6.74 g /100 g,7.14 mg / g,4.40,15.69,26.76 g /100 g,0.59 mg / g,11.56 mg / g and12.33 mg / g. Contents of 18 kinds of amino acids,at least 8 types were essential amino acids and a variety of medicinal amino acids.The ratio of essential amino acids and non- essential amino was 40.69%.These amino acids included all kinds of human essential amino acids and the proportion was appropriate,SRC was 94.22,and 20 fatty acids identified in seed oil consist of 54.80% unsaturated fatty acids were mainly composed of octadecenoic acid( 29.96%).12 mineral elements of seed were determined and the contents of K and Mn in the tested mineral elements were higher as a relatively abundant macro element and micro element.The content of heavy elements,including Cd、Hg、As and Pb were less than the maximum levels according to Chinese Pharmacopeia( 2010).The date showed the new resource food had rich nutrition and healthy functions,it reveals great development prospects.
