植物蛋白源抗氧化肽活性的评价方法及作用机制的研究进展

Progress in evaluation methods and action mechanism of antioxidant activity for plant protein- derived peptides

  • 摘要: 植物蛋白源天然抗氧化肽由于具有良好的抗氧化性和较高的安全性,因而受到国内外学者的广泛关注。本文综述了植物蛋白源抗氧化肽抗氧化活性的评价方法和作用机制,为进一步开发制备植物蛋白源抗氧化活性肽提供研究借鉴。 

     

    Abstract: Natural,safe,and efficient antioxidant peptides derived from many plant proteins have received much attentions from researchers at home and abroad. The evaluation methods and the molecular mechanism of antioxidant activity for plant protein- derived peptides were summarized in the present review,which will shed some lights on the further development and utilization of antioxidant peptides derived from plant proteins.
