果蔬中硒形态的研究进展

Selenium speciation in fruits and vegetables

  • 摘要: 硒是人体必需微量元素之一,人体缺乏硒元素或补充过量皆可导致多种疾病。我国绝大部分地区的居民缺硒,使用不同的方法将硒添加到果蔬中,可以提高果蔬的附加价值与经济效益,也使得硒在日常饮食中得到适当的补充。因此,果蔬富硒研究是一项利于全民健康的、具有重大意义的课题研究。本篇文章为一个简短的综述,主要内容是富硒果蔬近十年来的研究现状,同时讨论了果蔬中硒的富集方法及检测过程中的分析方法。 

     

    Abstract: Selenium is one of the 14 essential trace elements.It can cause a variety of diseases in human body that lack or overdose supplement of selenium. Most of Chinese residents lack selenium. It increases added value and economic benefits by enriching selenium in fruits and vegetables by using different methods,which also makes it possible to supply appropriate amount of selenium in human daily diet. Therefore,selenium- enriched fruits and vegetables is a research that beneficial and great significance to human health.This review gives a brief overview of the current situation of selenium enriched fruits and vegetables in resent ten years. The methods of selenium enrichment and detection are summarized simultaneously.
