食用菌对汞、砷的富集研究进展

Research progress in the enrichment of mercury and arsenic by edible fungi

  • 摘要: 汞、砷作为典型的有毒元素被认为是环境中比较严重的污染物,对人体的危害是一个长期、慢性的过程。与维管植物相比,大型真菌对一些特定的金属和类金属元素具有更强的富集能力,包括毒性元素汞、砷等。本文主要对食用菌中汞和砷元素含量水平、在菌体各部位的分布、生物富集及其健康风险分析的研究进展进行了概述,特别关注了野生食用蘑菇中汞和砷的研究发展现状。 

     

    Abstract: Mercury and arsenic, as two typical toxic elements in the environment, are considered to be the most common pollutants which harm the human body through a long-term, chronic poisoning process. Compared with vascular plants, macro fungi showed significant accumulating capacity to metals and some metalloids, including mercury, arsenic, and so on.This paper reviewed the levels of mercury and arsenic in the edible mushrooms and their distribution in the fruiting body, and focused on the bioaccumulation and health risk assessment.
