酶电极传感器在食品安全检测中的研究进展

Research progress in electrochemical enymze electrode sensor in detection of food safety

  • 摘要: 酶电极传感器因选择性好、灵敏度高、检测速度快等特点,在食品安全检测中得到了广泛的应用。本文综述了酶电极传感器的简介、原理和分类及其在食品安全领域(包括食源性致病菌、生物毒素、药物残留、食品添加剂、过敏原等)的研究应用进展,并对酶电极传感器的发展前景进行了展望。 

     

    Abstract: Enzyme electrode has better selectivity, higher sensitivity and faster detection speed. Therefore, they are applied widely in the field of food safety.This paper reviewed the introduction, principle and classification of the enzyme electrode and its research progress, which included food-borne pathogens, biological toxins, drug residues, food additives, allergen, etc.in the field of food safety.The future development of enzyme electrode is prospected.
