动物肝脏蛋白资源开发利用的研究进展

Research progress in development and utilization of animal liver protein resources

  • 摘要: 动物肝脏是肉制品加工过程中的副产物,是一种营养丰富的优质食品蛋白源,同时还是一类重要的功能性蛋白,因此,动物肝脏的资源利用率和经济价值急需提高。本文根据近年来国内外动物肝脏蛋白的研究情况,围绕动物肝脏蛋白的提取、生物活性以及在食品及其他领域的应用概况进行了综述,旨在为动物肝脏的深度开发和应用,提高动物肝脏资源的附加值提供理论依据。 

     

    Abstract: Animal liver is a byproduct in the processing of meat products, meanwhile it is a nutrient-rich quality food protein source, but also a class of important functional proteins, therefore, animal liver resource utilization and economic value need to improve.Based on the research progress of liver protein in domestic and foreign animals in recent years, the extraction of animal liver protein, biological activity and application in food and other fields are reviewed.The paper aims to provide theoretical basis for the development and application of the deep development and application of animal liver.
