番茄红素提取纯化及稳定性改善技术的研究进展

Research progress in extraction and purification of lycopene and techniques of improving its stability

  • 摘要: 番茄红素具有抑制多种心脑血管疾病的功效,其中它的抗氧化性已经成为近年来的研究热点。提取番茄红素的方法有很多,本文主要从溶剂提取法、超声波辅助提取法、超临界流体萃取法、高压脉冲电场辅助法、膜分离技术和大孔树脂吸附法入手,详细论述了它们的提取纯化原理、特点及近几年研究进展。由于番茄红素本身的稳定性不够高,本文在常规技术的基础上,综述了微乳化技术、微胶囊技术及纳米处理技术这些稳定性改善技术相关内容。总之,本文从番茄红素产品的生产线入手。分析了其工艺特点,并对番茄红素产品的发展前景进行了展望,以期促进其开发利用。 

     

    Abstract: Lycopene has the effect of inhibiting many kinds of cardiovascular and cerebrovascular diseases and its antioxidant ability has become an investigating spot in recent years.There are numerous approaches to extracting lycopene.Starting with the methods of solvent extraction, ultrasonic assisted extraction, supercritical fluid extraction, high intensity pulsed electric field assisted extraction, membrane separation and macroporous resin adsorption method, the passage specifically discussed the extracting and purifying theory, feature and research report in recent years.The intrinsic stability of lycopene isn't high enough, and the review summarized the techniques of microemulsion, microcapsule and nanometer processing on the foundation of normal processing which are relevant to the improvement in its stability. To conclude, starting with the manufacturing line of lycopene products, the paper analyzed the feature of related techniques and discussed the developing prospects of lycopene products to promote their exploitation and utilization.
