微生物生产威兰胶的研究进展

Research Progress in Microbial Production of Welan Gum

  • 摘要: 威兰胶是鞘氨醇单胞菌代谢分泌的一种新型胞外多糖,由D-葡萄糖、D-葡萄糖醛酸、L-鼠李糖和L-甘露糖四个糖单元组成,在生产应用中起到增稠、乳化、悬浮和稳定作用。威兰胶的利用价值高且无污染,其独特的性质在食品、医药和石油等工业领域都有着很大的发展潜力。本文主要综述了威兰胶特性结构、合成代谢途径、生产过程优化、提高经济性与分离纯化等方面的研究。

     

    Abstract: As a new type of extracellular polysaccharide,Welan gum could be secreted by Sphingomonas sp.,and is composed of four sugar units:D-glucose,D-glucuronic acid,L-rhamnose and L-mannose. Welan gum has functions of thickening,emulsifying,suspending and stabilizing in production and application. Due to its characteristics of high application value and pollution-free,welan gum has been widely used in various industrial fields,such as food,medicine and oil,showing great potential for further industrial application. In this review,the structure and property of Welan gum,the arobolic pathway of Welan gum,the optimization of production process of Welan gum,the improvement of its economical efficiency separation and purification are reviewed.
