太子参的生物活性及其在食品工业中的应用

Biological Activities of Radix Pseudostellariae and Its Application in Food Industry

  • 摘要: 太子参是中国传统保健类中药材之一,具备抗氧化应激、缓解疲劳、保护心肌、降低血糖血脂、改善记忆障碍、调节免疫系统功能等多种生物活性及功能。近年来,对太子参活性成分的研究及其健康食品的开发越来越得到重视,研发成果也为太子参在食品工业中的应用奠定了良好基础。本文针对目前太子参的研究现状,对太子参的主要功能成分、生物活性及其作用机制、在食品工业中的应用等方面进行总结,并对太子参发展前景进行展望,为太子参在未来的食品工业实践应用中更好地发挥功能效用提供理论依据。

     

    Abstract: Radix Pseudostellariae is one of the traditional Chinese medicinal herbs for health care in China. It possesses many bioactive functions, such as antioxidant stress activity, relieving fatigue, myocardial protection, hypoglycemic activity, hypolipidemic activity, improving memory impairment, anti-stress and enhancing immune function. In recent years, more and more attention has been paid to the research of active components of Radix Pseudostellariae and its development in health food. These research progress has laid the foundation for the application of Radix Pseudostellariae in the food industry. Based on the current research of Radix Pseudostellariae, this article reviewed the chemical composition, biological activity and application of Radix Pseudostellariae in food industry, and prospected for the development of Radix Pseudostellariae, providing a theoretical basis for Radix Pseudostellariae to play a better role in the practical application of food industry in the future.
