Research Progress of Edible Oil Nutrition and Management Statue of Their Health Claims

  • 摘要: 随着人们消费观念的变化与食用油种类的增加,食用油的营养价值受到越来越多的关注。本文综述了食用油营养成分研究进展,包括脂肪酸类营养成分和微量营养成分,以及中国、美国、加拿大、澳大利亚和新西兰、日本等国家和地区的食用油健康声称管理法规标准现状,综合分析影响食用油健康声称的因素。建议我国应加强食品标签声称规范标准体系建设,立足食品与健康的综合关系,全面考量食品整体营养价值,这对消费者合理选择食用油以及提高健康意识具有重要意义。

    国家成分健康声称摄入量/含量要求备注
    美国植物甾醇含有至少0.65 g植物甾醇的食物,每日食用2次,每次1.3 g,作为低饱和脂肪酸和低胆固醇膳食的一部分,可减少心脏病发病风险含有至少0.65 g植物甾醇的食物,每日食用2次,每次1.3 g健康声称
    美国油酸每天食用至少含10 g油酸(一汤匙)的食用油,可以降低患冠心病的风险。应取代饱和脂肪酸含量更高的油,而非增加每天摄入总能量健康声称
    欧盟维生素E维生素E有助于保护细胞调节氧化应激反应
    欧盟油酸用不饱和脂肪酸代替饮食中的饱和脂肪酸,有助于维持正常的血液胆固醇水平。油酸是一种不饱和脂肪酸产品中的脂肪酸至少有70%来源于不饱和脂肪且不饱和脂肪的能量占产品能量的20%以上
    欧盟亚油酸/亚麻酸定期食用必需脂肪酸对于儿童的正常成长和发育很重要
    欧盟亚油酸亚油酸有助于维持正常的血液胆固醇水平每日摄入10 g
    欧盟植物甾醇植物甾醇可显著降低血浆中胆固醇水平,而高胆固醇是一个冠心病发生的危险因素每天摄入至少0.8 g植物甾醇/植物甾醇酯有利于维持胆固醇水平
    加拿大饱和脂肪酸和
    反式脂肪酸
    食品中饱和脂肪酸和反式脂肪酸含量较低,可以降低患心脏病的风险a.每份食物中饱和脂肪酸和反式脂肪酸含量≤2 g;或饱和脂肪酸和反式脂肪酸的含量≤2 g/100 g预包装食品;
    b.食物从饱和脂肪酸和反式脂肪酸的总和中提供的能量≤15%
    加拿大维生素E饮食抗氧化剂;膳食抗氧化剂,可保护人体组织中的脂肪调节氧化应激反应
    澳大利亚
    和新西兰
    植物甾醇植物甾醇、植物固醇及其酯类,可以降低血胆固醇水平每份该食品必须含植物甾醇等同物≥0.8 g高级健康声称

    有助于儿童正常的生长发育
