Effect of Zn and Se enhancement in diet on mineral composition and volatiles of beef liver of Xuehua cattle

  • In order to investigate the effect of enhancement of Zn and Se in diet on the minerals and volatile compounds of beef liver of Xuehua cattle (Qinchuan cattle×Japanese black cattle) , sixteen Xuehua cattles were selected as objects of study, which were raised by basal diet and diet enhanced with Zn and Se.The minerals and volatile compounds of beef liver of Xuehua cattle were determinated after slaughter.It was found that the content of Zn and Se were increased by 73%and 18.6 folds through enhancement.The content of benzothiazole was increased by 15%.Moreover, enhancement of Zn and Se in diet had significant effect on content of nonanal, E-2-nonenal and 2-pentylfuran.The results showed that enhancement of Zn and Se in diet could increase the content of Zn and Se in beef liver of Xuehua cattle, while the relative content of sulfur-containing and aldehydes volatile compounds were affected significantly.
