  • Lactic acid bacteria exocellular polysaccharide is a natural biological polymer, which has many special physiological functions.Lactic acid bacteria have the ability to produce different kinds of exopolysaccharides (EPS) exhibiting a wide diversity of structures.EPS are classified, according to their composition into homopolysaccharides and heteropolysaccharides.The types of lactic acid bacteria exocellular polysaccharide, stucture, synthetic biology, biological function, purification methods and application prospect were reviewed in this paper.
