Determination of carbohydrates and fermentable products in beer manufacture using size exclusion chromatograph

  • A detection of oligosaccharide (DP≥4) , maltotriose, maltose, sucrose, glucose, fructose in malt fermentation broth and beer using size exclusion chromatograph was established. RSD was less than 2%, limit of detection was 0. 02 ~ 0. 15g/L . The method was rapid, accurate, reliable and environment friendly. Some byproducts of fermentation like lactic acid, acetic acid, glycerol and alcohol could also be detected simultaneously. It was an effective way for beer enterprises to monitor their products. Arabinose was not detected in malt and beer samples.
