Optimization on SPME conditions of volatiles in baked quail eggs

  • The solid phase microextraction (SPME) conditions of volatiles in baked quail eggs were researched, using quail eggs as raw materials.The types of extraction fibers, the extraction time, the extraction temperature and desorption time were optimized by single factor experiments and the orthogonal tests. The results showed that using DVB/CAR/PDMS fiber, extracting for 30min under 65℃ and adding amount of sample for 2g and desorption time for 2min were the optimized extraction conditions . Under these conditions, 34 kinds of volatile components were identified in the baked quail eggs.
