Research of different drying process for white apricot of LUN-tai in XinJiang

  • With white apricot as the main materials that one of main cultivars in Luntai of Xinjiang, solar drying ( SD) appliance was used as a single greenhouse device as controls. The main purpose on study was to investigate different solar-drying process and drying characteristics of solar-dryer for white apricot through comparing the apricot moisture content, water activity and the changes of color difference of the two kinds of devices in drying. The results showed that the drying-period of white apricot was 10d under SD appliance, compared with house drying, with the drying time shorter, the final product-quality were better. Weight loss ratio of white apricot was 28.9% , water activity was 0.45, and L value, a value and b value were 42.7, 20.1 and 31.8, respectively.
