Application of computational fluid dynamics in food thermal processing

  • In this paper, a brief introduction of the solving process, software structure and some related software of computational fluid dynamics ( CFD) in food thermal processing were given, and application of CFD in baking and thermal sterilization were reviewed. In addition, the advantages and disadvantages were summarized, and the development of CFD in food thermal processing was also outlined.
