Review of recent advances on radio frequency ( RF) heating application of fruits storage

  • RF heating technology has been applied in food industry for several years for its volumetric heating, adjustable heating rate and high energy efficiency. Applications of RF heating technology were reviewed and analyzed in disinfesting and disinfecting of dried fruits, and in fresh fruits to disinfect and disinfest. RF heating technology can accelerate the rate of drying dried fruits, killing pests or pathogens without damage to the quality of dried fruits. When RF applied in fresh fruits to disinfest, fruit quality might be affected. The research of RF application to control fresh fruits diseases is limited.The direction of development of RF heating technology was prospected.
