Application of nuclear magnetic resonance technology in alcohol quality detection

  • Nuclear Magnetic Resonance( NMR) technology is a kind of inspecting technology and is currently widely used in food detection.The application of the NMR in alcohol quality detection were reviewed from three aspects:geographical origin traceability,vintage and adulteration identification.Isotopic trace and component analysis were utilized by NMR for geographical origin traceability. Metabolites and hydrogen bonding structures analysis were utilized by NMR for vintage identification. Ingredient analysis was used by NMR for identification adulterated.Meanwhile some problems like signals overlap,lack of database and expensive of equipment price in NMR still exist and should be resolved.
