Signification and identification of food-derived bioactive peptides fingerprint

  • Food-derived bioactive peptides exert multiple biological functions and thus attract worldwide interests for research and application. The increasing prosperity of bioactive peptides products urges an accurate method for evaluation and determination of peptides products.Based on numerous researches of bioactive peptides in the passing decades,the definition and construction of fingerprint used for identifying bioactive peptides are discussed in the report.The fingerprint construction of bioactive peptides could serve as a theoretical reference for the production management and application in peptides food industry.
