Composition analysis and evaluation of Goosefish liver nutrition

  • The nutritional components ( general nutrients, amino acids, fatty acids, inorganic salts, vitamins, etc.) of Goosefish liver were determined, and their nutritional value was synthetically evaluated.The contents of these indices were evaluated using Gas Chromatograph-Mass Spectrometer-computer ( GC/MS) , high performance liquid chromatography ( HPLC) and Inductively coupled plasma atomic emission spectrometry ( ICP-ACE) . The results showed that the protein content of Goosefish liver was10.36%; fat was 31.26%.All samples contained 17 kinds of amino acids and the total content of amino acids was 19.04 mg/g, The essential amino acids and delicious amino acids percentages of total amino acids were 40.22% and 43.43%, respectively.It had higher content of polyunsaturated fatty acids, especially EPA and DHA content can be as high as 15.84% and 9.17%.The content of vitamin E and A were 14.10 mg/100 g and 2.33 mg/100 g. Cholesterol content was 1000 mg/100 g.Trace element content was rich, and the contents of heavy metals were lower than that of the national standard.The pesticide residues are in the national permissible range.Goosefish fish liver is rich in nutritional value, which is of great value to develop.
