Effect of mineral on structure and stability of food allergens

  • Protein is an important substance to cause food allergy.The protein in food allergens binding minerals will affect its structure and function.In this paper, it analyzed the influential factors of minerals binding food protein and the influence of minerals on the structure and stability of allergens.It was also discussed the effects of metal ions on several allergens in different conditions.That analyzed the relationship of changes of the structure and allergenicity in order to finding the internal connection.This provides a theoretical basis to obtain a way that can enrich nutrients and reduce the allergenicity of allergens at the same time which can be used to developing of hypoallergenic food product.
