Suitable Harvest Time of Main Wine Grape in Xinjiang

  • The timely harvest of grapes is the key to obtaining high-quality wines. Using three white wine grape fruit and brewing wine in different harvest time in Yanqi basin of Xinjiang as research objects, measured fruit quality and physical and chemical indexes of wine, the relationship between different indexes and optimal harvest time of grape was analyzed.The results showed that the hardness and single fruit weight of grape fruit were significantly different under different harvest time (p < 0.05). The pH, soluble solids content, solid acid ratio and sugar acid ratio of grape fruit were increased, and the indexes were significantly different (p < 0.05). The contents of volatile acid, total sulfur, titratable acid and total sugar in wine are in accordance with the National Standards.The principal component analysis showed that the best harvest time of Chardonnay was 86 days after the flower, and 89 days after the flower was the best harvest time for Riesling and Grey Riesling in the Yanqi basin of Xinjiang.
