Research Progress on Detection Techniques for Animal Derived Food Safety

  • Food safety is a critical, global concern, especially animal derived food safety issues. After processing and reorganizing, the original form of animal derived food has been destroyed, and sensory identification is hard to distinguish true from false.Therefore, this article discussed the definition, classification and adulteration of animal-derived foods in detail, explained the potential hazards of adulteration, summarized the detection techniques for animal derived food safety, and prospected the development of animal-derived foods in China in order to provide references for animal derived food safety detection.
