Nutritional Components Analysis and Quality Evaluation of Guangxi Silver Carp (Hypophthalmichthys molitrix) and Changfeng Silver Carp(Hypophthalmichthys molitrix)

  • In order to compare and analyze the differences of muscle quality in Guangxi silver carp(GSC)and Changfeng silver carp(CSC),5 males and females of silver carp individuals with similar body weight were selected respectively and the nutrient ingredient,water holding capacity(WHC),acidity,texture profile acid composition of the muscle in 4 groups were measured,as well as the muscle nutrition evaluation. The results showed that the crude protein(17.34%~18.57%)was rich in muscle of the 4 groups. The crude fat and ash content of the GSCM and GSCF were significantly higher than that of CSCM and CSCF,but the hardness,springiness and chewiness were significantly lower than that of the CSCM(P<0.05).The resilience of GSCM was significantly higher than that of the other 3 groups,but the stickiness was significantly lower than that of CSCF(P<0.05). There was no significant difference in most of the texture indexes between male and female of the two silver carp species.Among the 17 amino acids detected in the 4 groups,Asp content was the highest,followed by Glu and Lys,His and Cys were the lowest,and the ratios of EAA/TAA and EAA/NEAA were 39.61%~41.11% and 65.60%~69.80%,respectively,which were close to the ideal protein ratios of 40% and 60% required by WHO/FAO. Moreover,Amino acid index(EAAI)was higher than 85(86.13~100.00)in muscles of the 4 groups,and the ∑TAA,∑EAA,∑FAA and EAAI of GSCM was the highest among the 4 groups. More than 20 kinds of fatty acids were detected in muscles of the 4 groups,and ∑UFA and ∑PUFA accounted for more than 80% and 40% of the total fatty acids,respectively. Except for CSCM,DHA content of the other 3 groups was the highest,which were 30.40%,40.36% and 24.01%,respectively. ∑PUFA and EPA+DHA content of GSC were higher than that of CSC,while ∑SFA was slightly lower than that of CSC. In conclusion,the muscle nutrition content and composition ratio of the two kinds of silver carp could meet the needs of human body,and the flesh of Guangxi local silver carp were tender and the content of PUFA was higher than that of Changfeng silver carp.
