Functionality of Bioactive Peptides Derived from Ovotransferrin

  • Ovotransferrin in egg white has multiple biological activitiesand functional properties, which makesit an important protein for bioactive peptide production. The hydrolyzed ovoltransferrin mainly produces bioactive peptides with various functions of antibacterial, antiviral, anti-inflammatory, antitumor, antioxidant, and inhibitory activities of angiotensin converting enzyme (ACE), which can provide great benefits for human health and attract more and more attention.In this paper, the preparation of ovotransferrin functional peptides, the biological activities of functional peptides and its potential application as functional food and therapeutic drug raw materials were reviewed in order to lay a foundation for the development and utilization of functional peptides.
