香椿的营养保健功能及其产品的开发进展

摘要: 香椿香味浓郁,食用鲜美,营养价值高,含有黄酮、多酚等多种生物活性成分,具有较高的营养保健功能,因而得到了人们广泛关注和研究。本文介绍了香椿叶的营养价值以及抗氧化和抗癌等保健功能,并对香椿调味制品和香椿果蔬汁等加工制品的开发现状进行了阐述,最后对香椿的进一步开发及其亟待解决的问题进行了展望和分析。Abstract: Toona sinensis has aromatic flavor and rich nutritional value. It caused wide public concern due to its bioactive components such as flavonoids and polyphenols. The nutritional value and health-care functions such as antioxidant and anticancer activities, were introduced in this paper. The development and utilization of Toona sinensis in food processing, its prospects and unresolved problems were discussed.
