  • 摘要: 粟米具有丰富的营养价值和潜在健康益处,也是一种良好的植物蛋白来源,目前已成为研究热点。粟米蛋白通过蛋白酶酶解或微生物发酵等方法提取含肽组分,再经分离纯化、鉴定获得肽序列,这些肽通过作用于不同的分子靶点,在预防慢性疾病方面表现出多种功能活性,如抗氧化、抗炎、抗菌、调节血糖等。文章系统介绍了粟米蛋白肽的制备、分离纯化和鉴定方法,深入分析了其在功能活性方面的最新研究进展,重点探讨了肽序列与功能活性的关联及其潜在分子机制,为粟米蛋白肽的进一步研究提供参考,以期进一步推动该领域的发展。

     

    Abstract: Millets have rich nutritional value and potential health benefits, making them a good plant protein source and a research hotspot. Millet protein peptides are extracted from millet protein through protease hydrolysis or microbial fermentation methods and then isolated, purified, and identified to obtain peptide sequences. These peptides exhibit various functional activities that prevent chronic diseases by acting on different molecular targets, such as antioxidant, anti-inflammatory, antibacterial and blood glucose regulation. Therefore, this paper systematically reviews the preparation, separation, purification, and identification methods of millet protein peptides, providing an in-depth analysis of recent research progress on their functional activities. The emphasis is on the correlation between peptide sequences and their functional activities and the potential molecular mechanisms involved. This paper aims to provide a reference for further research on millet protein peptides and promote this field's development.
