食品中食源性致病菌活菌检测方法研究进展

Research Progress of Detection Technology of Viable Foodborne Pathogens

  • 摘要: 食源性致病菌是危害食品安全和公众健康的重要因子,及时、准确检测食品中的食源性致病菌活菌是保障食品安全的关键。近年来针对食源性致病菌活菌的检测方法发展显著,与传统培养相比更加快速、准确和灵敏。本文系统总结食品中食源性致病菌活菌的不同状态,从可培养性、核酸、细胞膜完整性、代谢产物及噬菌体角度,归纳当前食源性致病菌活菌检测方法的最新研究进展,并讨论各方法的优缺点以及未来发展前景,提出基于噬菌体的活菌检测在特异性、检测速度和灵敏性方面具有独特优势,旨在为食源性致病菌活菌快速检测技术研发提供参考。

     

    Abstract: Foodborne pathogens are an important factor endangering food safety and public health. Timely and accurate detection of viable foodborne pathogens in foods is the key to ensuring food safety. In recent years, there has been significant development in the detection of viable foodborne pathogens, which is more rapid, accurate, and sensitive than traditional cultures. Therefore, the viable status of foodborne pathogens in foods is summarized in this paper, and the latest research progress of the current viable detection methods of foodborne pathogens is summarized from the perspective of their culturable, nucleic acid, cell membrane integrity, metabolites, and phage. By comparing the advantages and disadvantages of each method, the future development prospects are proposed. The viable pathogens based on phages have unique advantages in terms of specificity, detection speed, and sensitivity, aiming to provide a reference for the development of rapid detection technology for viable foodborne pathogens.
