我国青花椒保鲜及加工技术研究现状

Research Status of Preservation and Processing Technology of Zanthoxylum schinifolium in China

  • 摘要: 青花椒是我国传统的药食两用植物资源,不仅能赋予食品特殊的香气和麻味,也具有抑菌、消炎、镇痛等生物活性。目前,青花椒市场以保鲜青花椒和干制青花椒等初级加工品为主,加工深度低、产品种类少,难以满足市场多元化需求。为深度开发利用青花椒资源,本文综述了青花椒保鲜、干制及深加工技术的研究现状,对比分析了不同技术的优缺点,以期为提高青花椒现有产品品质、促进青花椒精深加工明确方向。

     

    Abstract: Zanthoxylum schinifolium (Z. schinifolium) is a traditional Chinese medicinal and edible plant resource that not only imparts special fragrance and numbness to food, but also has antibacterial, anti-inflammatory, and analgesic biological activities. Currently, the Z. schinifolium market mainly consists of fresh Z. schinifolium and dried Z. schinifolium and other primary processed products, with low processing depth and few product varieties, which are difficult to meet the diversified market needs. In order to deeply develop and utilize the Sichuan pepper resources, this article reviews the current research status of Z. schinifolium preservation, drying, and deep processing technologies, compares and analyzes the advantages and disadvantages of different technologies, in order to provide direction for improving the quality of existing Z. schinifolium products and promoting the development of Z. schinifolium deep processing.
