Abstract:
Flavonoids have various physiological functions and health benefits, but there are still problems such as poor water solubility, low stability, and low bioavailability, which limit their efficient application in the field of functional foods. The protein is amphiphilic, which can effectively encapsulate, protect and control the release of active substances such as flavonoids, improve their biological activity and absorption utilization efficiency. This review summarized the types, properties and preparation methods of different protein delivery systems resulting in different digestive behaviors and release characteristics. And the stability of protein-flavone delivery vector in the mouth, stomach and small intestine, the influence of gastrointestinal environment on the vector, and its interaction with digestive enzymes were discussed. It will provide scientific guidance for the reasonable construction and effective absorption and utilization of the delivery system of functional factors such as flavonoids.
