多糖基食品包装材料的设计及其光动力抗菌活性的应用进展

Advances in the Design of Polysaccharide-based Food Packaging Materials and Their Application for Photodynamic Antimicrobial Activity

  • 摘要: 食品包装是食品研究的一个重要领域,其在保持食品品质方面发挥着重要作用。食品在贮存和运输期间非常容易被微生物污染,造成食品的腐败变质,进而引发人类食物中毒等症状同时也造成了经济损失。光动力灭活(Photodynamic inactivation,PDI)是近年来发展起来的一种新型的杀菌技术,已被证明有良好的杀菌效果。另外,多糖作为重要的活性物质,因其天然无毒、可生物降解的特点,常被用作食品包装材料以减少传统塑料包装的污染。进一步开发应用具有光动力抗菌活性的多糖基食品包装材料,对于该领域的提升和创新有着重要意义。在此,本综述概述了PDI的作用原理、光敏剂(Photosensitizer,PS)种类、光源种类;也概述了多糖基天然聚合物的组成、多糖基食品包装材料的特性;并介绍了具有光动力抗菌活性的多糖基食品包装材料在水果、海鲜、肉制品等方面的应用及其对食品品质的影响,为多糖基食品包装材料在保鲜技术方面的发展和应用提供了重要的借鉴作用。

     

    Abstract: Food packaging is an important area of food research, and it plays an important role in maintaining food quality. Food is very easy to be contaminated by microorganisms during storage and transportation, resulting in spoilage of food, which can lead to symptoms such as food poisoning in humans as well as economic losses. Photodynamic inactivation (PDI) is a new type of sterilization technology developed in recent years, which has been proven to have great bactericidal effects. In addition, polysaccharides, as important active substances, are often used as food packaging materials to reduce the pollution of traditional plastic packaging due to their natural, non-toxic and biodegradable characteristics. Further development and application of polysaccharide-based food packaging materials with photodynamic antibacterial activity is of great significance for the promotion and innovation in this field. Here, this review provides an overview of the principle of action of PDI, the types of photosensitizers (PS), and the types of light sources. The composition of polysaccharide-based natural polymers and the characteristics of polysaccharide-based food packaging materials are also summarized, and the application of polysaccharide-based food packaging materials with photodynamic antibacterial activity in fruits, seafood, meat products and their influence on food quality is introduced, which provides an important reference for the development and application of polysaccharide-based food packaging materials in preservation technology.
