Pickering乳液催化体系及其在食品中的应用进展

Recent Advances in Pickering Emulsions Catalysis System and Its Applications in Food

  • 摘要: 本文基于Pickering乳液催化体系的相关研究,介绍了Pickering乳液催化体系中酶常见的固载方法,Pickering乳液催化体系的固体颗粒、响应性设计和连续流动反应器设计。并且通过阐述Pickering乳液催化体系在油脂水解、低聚异麦芽糖的纯化和活性物质的合成中的应用,表明了Pickering乳液催化体系在食品领域中的应用潜力。

     

    Abstract: Based on the related researches on Pickering emulsions catalysis system, this paper reviews the enzyme immobilization methods and solid particles, responsive design, and continuous flow reactor design in Pickering emulsion catalytic system. Moreover, the potential application of Pickering emulsions catalysis system in the food field is demonstrated by reviewing the application of Pickering emulsions catalysis system in the hydrolysis of oils, purification of oligoisomaltose and synthesis of actives.
